      当前肉类食品安全已成全球范围内备受关注的问题。开发快速、精准且可标准化的肉类食品安全鉴定技术,已成为保障食品安全、维护市场公平的核心任务。传统分析方法在肉类食品安全鉴定中虽有一定成效,但其局限性日益凸显。化学计量学通过构建数学模型与算法,对肉类食品检测的多维数据进行深度解析,已成为解决肉类食品安全复杂问题的核心技术。本文介绍了化学计量学,对化学计量学在肉类食品安全鉴定的应用研究现状与进展进行综述,以期为化学计量学在肉类食品安全鉴定的应用的进一步研究提供理论依据。
英文摘要:
      Food safety in meat products has become a global concern. Developing rapid, accurate, and standardized identification technologies for meat safety has emerged as a core task to ensure food security and maintain market fairness. Although traditional analytical methods have shown some effectiveness in meat safety identification, their limitations are increasingly prominent. Chemometrics has become a core technology for solving complex problems in meat safety by constructing mathematical models and algorithms to deeply analyze multidimensional data from meat food testing. This paper introduces chemometrics and reviews the research status and progress of chemometrics in meat safety identification, aiming to provide a theoretical basis for further research on the application of chemometrics in meat safety identification.
