| 红外光谱技术凭借其快速、无损、无需复杂前处理等优势,在食品检测领域展现出巨大潜力,但其应用常受制于食品基质效应和复杂光谱解析。本文综述了红外光谱与化学计量学相结合在食品检测中的应用,重点探讨化学计量学方法在光谱数据预处理、数据探索性分析及模型构建中的关键作用。进而综述两者结合在食品农药残留检测、食品非法添加检测及食品质量控制领域的应用。同时,也探讨了未来的发展方向,以此推动食品检测向智能化、现场化发展,并为食品安全监管提供有效的解决方案。 |

| Infrared spectroscopy has shown great potential in the field of food detection due to its advantages of fast, non-destructive, and no need for complex pretreatment. However, its application is often limited by food matrix effects and complex spectral analysis. This paper reviews the application of infrared spectroscopy combined with chemometrics in food detection, focusing on the key role of chemometrics in spectral data preprocessing, data exploratory analysis and model construction. Furthermore, the application of the combination of the two in the field of food pesticide residue detection, food illegal addition detection and food quality control was reviewed. At the same time, it also discusses the future development direction, so as to promote the intelligent and on-site development of food testing, and provide effective solutions for food safety supervision. |
